  • 3 tbsp olive oil, divided

  • 10 oz (280 g) mushrooms (cremini, button, or portobello), sliced

  • 5 oz (140 g) fresh spinach

  • ¼ cup sun-dried tomatoes, chopped

  • 4 cloves garlic, minced

  • ¼ tsp red pepper flakes (optional)

  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Cook the ravioli in salted boiling water until al dente. Drain and set aside.

  2. Sauté the vegetables: In a large skillet, heat 2 tbsp olive oil over medium heat. Add mushrooms and sun-dried tomatoes. Cook for 2–3 minutes until mushrooms soften.
