  • 1 cup julienned carrots

  • 1 cup bean sprouts

  • ½ cup thinly sliced bell peppers

  • ½ cup chopped green onions

  • 1 tablespoon soy sauce

  • 1 teaspoon sesame oil

  • ½ teaspoon grated ginger

  • ½ teaspoon minced garlic

For the wrappers:

  • 12 spring roll wrappers

  • 1 egg, beaten (for sealing)

  • Oil for frying or baking

For the dipping sauce:

  • ¼ cup soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon honey or maple syrup

  • ½ teaspoon chili flakes (optional)

Instructions

1. Prepare the Filling

  • Heat sesame oil in a pan over medium heat.

  • Add garlic and ginger, sautéing until fragrant.

  • Toss in cabbage, carrots, bean sprouts, and bell peppers. Stir-fry for 2-3 minutes.

  • Add soy sauce and green onions, mixing well. Remove from heat and let cool.

2. Assemble the Spring Rolls

  • Lay a spring roll wrapper flat. Place 2 tablespoons of filling near one edge.

  • Fold the bottom edge over the filling, then fold in the sides.

  • Roll tightly and seal the edge with beaten egg.

3. Cook the Spring Rolls

  • For frying: Heat oil in a pan to 375°F (190°C). Fry rolls until golden brown.

  • For baking: Preheat oven to 350°F (175°C). Brush rolls with oil and bake for 20 minutes, flipping halfway
