Cauliflower Fried Rice
Recipe
Ingredients:
- 1 medium head of cauliflower, riced
- 2 tablespoons sesame oil
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 green onions, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce or tamarind
- Salt and pepper to taste
Instructions:
- Rice the Cauliflower: Remove the leaves and stem from the cauliflower and cut it into florets. Use a food processor to pulse the florets until they resemble rice grains.
- Cook the Eggs: Heat 1 tablespoon of sesame oil in a large skillet over medium heat. Pour in the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add the remaining sesame oil. Add the minced garlic and cook for about 30 seconds until fragrant. Toss in the mixed vegetables and sauté for about 3-4 minutes until tender.
- Add the Cauliflower Rice: Stir in the riced cauliflower and cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Combine and Season: Return the scrambled eggs to the skillet along with the sliced green onions. Pour in the soy sauce and season with salt and pepper. Stir everything together until well combined and heated through.
